The worst part of the night cramp is not the pain. It is lying in the dark afterwards, waiting to see if the second one is coming. Here is what is actually happening: a cramp is a signalling failure, the muscle fires and the relax message stops landing. Five things interfere with that signal. Most players stack two or three at once.
Sweat is not just water. It carries out the sodium, potassium and magnesium your muscles use to fire and relax. Play after a full day in air-conditioning with coffee and not much water, and the 2am cramp is the bill for the whole day.

A lot of plain water after a heavy sweat dilutes the sodium you have left. Less sodium, when sodium is exactly what carries the signal. "But I drank water all match" is the most common sentence in cramp stories for a reason.
